白茶、绿茶、乌龙茶与红茶有何不同?

Is tea or coffee better, and which has more caffeine?
Tea has less caffeine than coffee cup for cup: the FDA puts an 8-ounce cup of green or black tea at 30 to 50 mg and the same cup of coffee at roughly 80 to 100 mg. Neither is simply healthier; both can fit a healthy diet, and the bigger differences are caffeine, acidity, and what you add to the cup.
Black, green, oolong, white and jasmine tea all come from the same plant and fall in broadly the same caffeine range; the dose, water temperature and steeping time change a cup more than the category does. Tea also contains L-theanine, which many drinkers feel as steadier alertness than coffee gives. Coffee is usually more acidic.
For a morning drink, pick by how much caffeine you want and how your stomach reacts; later in the day, caffeine-sensitive people sleep better with a weaker cup or a caffeine-free infusion. Evidence does not support declaring either drink the healthier one: studies on both are largely observational, and sugar, cream and portion size often matter more than the drink itself.
How do black, green and white tea compare, and can they be mixed?
Black, green and white tea come from the same plant and differ in processing: green tea is heated early to stop oxidation, white tea is only withered and dried, and black tea is fully oxidised. Black tea tastes fuller and maltier, green tea fresher and more vegetal, white tea softer and sweeter. They can be mixed, and blends of different teas are common.
None of the three is the single best choice; each has caffeine and polyphenols in different forms. White tea is often assumed to be lowest in caffeine, but bud-rich white teas can match green or black tea. In China, black tea is called red tea (hongcha), after the colour of its liquor; in Western shops “red tea” usually means rooibos, a caffeine-free South African herb.
When blending, remember each tea prefers a different water temperature: brew a mix at the temperature suited to the most delicate tea in it. Oolong, jasmine, matcha and Earl Grey are all tea from the same plant too: oolong is partly oxidised, jasmine is usually green tea scented with jasmine flowers, matcha is powdered shade-grown green tea, and Earl Grey is black tea flavoured with bergamot.
How is tea decaffeinated?
Decaffeinated tea is ordinary black or green tea that has had most of its caffeine removed, usually with pressurised carbon dioxide or with a solvent such as ethyl acetate. It is reduced in caffeine, not caffeine-free, and the process also removes some aroma and polyphenols.
Naturally caffeine-free drinks such as rooibos, chamomile or fruit infusions are not tea from the tea plant at all. Organic tea is not decaffeinated: organic certification describes how the tea is grown and handled, not its caffeine content.
