White tea is the only major Chinese category where grade is decided almost entirely in the field, before any processing decision is made.

How is white tea graded?

By plucking standard. White tea is withered and dried without rolling or fixation, so the processor has far fewer levers than in green or oolong production. Bai Hao Yin Zhen is single unopened buds. Bai Mu Dan is one bud with one to two leaves. Gong Mei takes one bud with two to three leaves. Shou Mei is mature leaf from later plucking.

Where is white tea demand concentrated?

White tea demand is concentrated in specialty channels in Russia, North America and East Asia, where the category is bought by origin name. Fuding in Ningde and Zhenghe in Nanping, Fujian, are the reference origins.

It is also a supply story. White tea requires no rolling machinery and no fixation step, which makes it accessible to smaller gardens, but it is completely dependent on weather during the withering window.

What should a white tea contract specify?

Grade by plucking standard, origin county, harvest window, moisture at or below 7.0%, and whether the tea ships loose or compressed. Compressed formats — 100 g, 300 g and 350 g cakes — change both the storage brief and the HS treatment once packed into units of 3 kg or less.

White tea can be aged, but only if it stays dry and free of odour, which makes storage conditions a contract term rather than a courtesy.

What is the difference between Bai Mu Dan and Shou Mei?

Bai Mu Dan is plucked as one bud with one to two leaves and is the main export volume grade. Shou Mei is mature leaf from a later plucking; it has a fuller body, costs less per kilogram and presses well into cakes.

Where does the best white tea come from?

Fuding in Ningde and Zhenghe in Nanping, Fujian, are the reference origins for Chinese white tea.

Why can some white tea grades be expensive?

Price can reflect a selective plucking standard, short harvest window, labour, cultivar, origin, processing control, sorting, storage and market demand. A bud-heavy grade is not automatically better for every use. Compare the written grade, cup, harvest information and delivered terms instead of using a high price as proof of quality.

Does older white tea always mean better white tea?

No. Age can change aroma and taste, but value depends on authentic production records, suitable starting material and controlled storage. Heat, moisture, odours or poor packaging can damage tea rather than improve it. Treat an age statement as a traceability claim that needs evidence, not as an automatic quality grade.

Why is white tea expensive?

Top white tea, especially Bai Hao Yin Zhen, is made only from young buds picked in a short spring window, so yield per hectare is low and picking is slow. Origin, bud quality and ageing add premiums; lower grades such as Shou Mei are far cheaper.

What is aged white tea?

Aged white tea is white tea, often pressed into cakes, stored for several years so its taste deepens towards honey, dried fruit and wood. Age changes flavour; it does not by itself guarantee quality, and storage conditions matter as much as years.

What types of white tea are there, and which should I choose?

Four grades by plucking standard: Bai Hao Yin Zhen, buds only, delicate and sweet; Bai Mu Dan, a bud with one or two leaves, fuller and floral; Gong Mei and Shou Mei, later leafier pluckings, stronger and cheaper. Choose Bai Mu Dan for everyday drinking, Yin Zhen for the top of a range, Shou Mei for value or pressing into cakes.

What does white tea look like?

Bai Hao Yin Zhen is silvery, downy needle-shaped buds; Bai Mu Dan is buds with green and silver leaves; Shou Mei is darker, leafier and more broken. Brewed, white tea is pale gold to light amber.
