How do you brew gunpowder tea?
For a plain cup, use about 2 grams — roughly a teaspoon — of gunpowder tea per 250 ml of water at 80 to 85 °C and steep for 2 to 3 minutes. The pellets unroll as they brew, so a little goes a long way; a longer or hotter steep turns it smoky-bitter.
For North African mint tea, use more leaf, rinse it briefly with hot water, then brew it strong with fresh spearmint and sugar and pour from height to aerate. Gunpowder is rarely drunk with milk; mint and sugar are its classic partners. Its caffeine is in the normal green-tea range — the FDA puts an 8-ounce cup of green tea at 30 to 50 mg, against 80 to 100 mg for coffee.
How does gunpowder compare with sencha, matcha, oolong, jasmine and Lapsang Souchong?
Gunpowder is Chinese green tea rolled into tight pellets, with a bold, slightly smoky taste. Sencha is Japanese steamed green tea, grassier and lighter; matcha is shaded green tea ground to powder and whisked; jasmine is usually green tea scented with jasmine flowers.
Oolong is a different category, partly oxidised and floral to roasted. Lapsang Souchong is a black tea smoked over pine, so its smokiness is far stronger than gunpowder’s faint toasty note, which comes only from pan-firing. Gunpowder’s health profile is that of green tea generally; the pellet shape keeps the leaf fresh longer but adds no special benefit.
