Minimal processing does not mean caffeine-free, and a pale liquor does not reveal the dose. Bud-rich white teas can still deliver meaningful caffeine depending on leaf amount and infusion time.

03

White tea works especially well in 3 gentle applications: cold infusions, fruit poaching liquids and lightly flavoured syrups. Its quiet aroma suits pear, peach, lychee and floral desserts without adding the roast of oolong or the briskness of black tea. Brew it slightly stronger for cooking, strain fully, and treat the infusion as a perishable food ingredient.

A concentrated white-tea infusion can also replace part of the water in jelly, sorbet or a non-alcoholic sparkling serve. Used leaves can enter home compost if they are loose and free of plastic mesh, staples or synthetic sachets.

04

05

How do you brew white tea, and how many times can it be steeped?

Brew white tea with water at about 80 to 90 °C, using 3 to 5 grams of leaf per 250 ml, for 3 to 5 minutes; silver-needle buds prefer the cooler end, fuller Bai Mu Dan and Shou Mei the hotter. White tea can be steeped three to six times, lengthening each infusion as the leaf opens.

Gongfu style — more leaf in a small pot with short infusions of 30 to 60 seconds — brings out sweetness and texture. Aged Shou Mei and pressed white tea cakes tolerate near-boiling water and can even be simmered briefly for a dark, honeyed cup. White tea is usually drunk plain; its light, sweet taste is easily hidden by additions.

06

Is white tea good for you, and can you drink it every day?

White tea is a pleasant, low-calorie drink that most healthy adults can enjoy every day, but research on specific benefits is limited, largely from laboratory and small human studies. The realistic cautions are caffeine and, if drunk with meals, reduced absorption of iron from plant foods.

White tea does not dehydrate you at normal intakes; like other tea, it counts towards daily fluids. It is not alkaline in any meaningful sense: brewed, it is mildly acidic to near neutral, and no drink changes the body’s blood pH. Blends of white tea with mint, rose, lychee or hibiscus change the flavour, not the evidence.

Does white tea contain caffeine, and can you drink it at night?

Yes. “Theine” is simply caffeine, and white tea contains it. White tea is not reliably lower in caffeine than green or black tea — bud-rich grades can be as high — so caffeine-sensitive drinkers should avoid it close to bed.

When is the best time to drink white tea, and how much?

Morning or afternoon suits most people. For healthy adults a few cups a day is typical; the limit that matters is total caffeine, and the FDA cites 400 mg a day from all sources as not generally associated with dangerous effects.

What is white tea with mint used for?

White tea with spearmint or peppermint is a refreshing blend, drunk hot or iced for flavour. The mint adds a cool taste and no caffeine; neither ingredient has been shown to treat any condition.

Can white tea be mixed with rose, lychee or hibiscus?

Yes. Rose and lychee white tea is a popular sweet, floral blend; hibiscus adds tartness and a red colour. Steep the blend at white tea’s gentle temperature so the leaf stays sweet.

Is white tea strong?

White tea is usually light and delicate, with a soft, sweet taste and pale liquor. It becomes stronger with more leaf and longer infusions, and aged white tea is deeper and fuller than fresh.

How do you make iced white tea?

Cold-brew 8 to 10 grams of white tea per litre of cold water in the refrigerator for 6 to 10 hours, then strain. The result is sweet, smooth and pale gold, and needs no sugar.

What teapot suits white tea?

A glass or porcelain teapot, or a gaiwan, which lets the leaf be seen and does not hold flavours. Use water well below boiling for Bai Hao Yin Zhen and Bai Mu Dan, and keep a clay pot, if you use one, for white tea alone.
