Jasmine tea is an aromatic ingredient for 3 especially good formats: rice, light desserts and cold drinks. Infuse it into water for rice or jelly, into cream for panna cotta, or into syrup for pear, lychee and citrus. Keep other flavours restrained so the flower remains recognisable, and strain the leaf before prolonged heating to limit bitterness.

05

How much jasmine tea per cup, and how long should it steep?

Use about 2 to 3 grams of jasmine tea — roughly a teaspoon of leaf or 6 to 8 jasmine pearls — per 250 ml of water at 80 to 85 °C, and steep for 2 to 3 minutes. Bitterness usually means the water was too hot or the tea steeped too long; the flower aroma survives best in water well below boiling.

Jasmine pearls unfurl slowly, so give the first infusion the full time and later ones a little longer; good jasmine gives three or more infusions. A glass or porcelain pot shows the leaf and keeps the aroma clean. Drink it plain; a slice of lemon is a pleasant addition if you like a brighter cup.

06

Which jasmine tea is best for milk tea and bubble tea?

Jasmine green tea is one of the standard bases for milk tea and fruit tea in bubble-tea shops, because its floral aroma carries through milk, sugar and ice. Choose a jasmine tea with a clear, strong scent and brew it more concentrated than for a plain cup.

Jasmine can be drunk with milk; a floral “jasmine milk green tea” is a common shop drink. For cold versions, brew double strength and pour over ice, or cold-brew overnight. Jasmine tea is also used by some brewers to flavour beer, adding a floral note to light styles.

Preguntas frecuentes

How much caffeine is in jasmine tea, and can you drink it at night?

Jasmine tea is usually green tea scented with jasmine flowers, so it has green tea’s caffeine — the FDA puts an 8-ounce cup of green tea at 30 to 50 mg — while the flowers add none. It can keep caffeine-sensitive people awake, so drink it earlier in the day if sleep suffers.

Can you drink jasmine tea every day?

Yes, for most healthy adults. Keep total caffeine in mind: the FDA cites 400 mg a day from all sources as not generally associated with dangerous effects. There is no evidence of benefits specific to men or women; the usual cautions are caffeine sensitivity and reduced iron absorption with meals.

Can jasmine tea be cold brewed?

Yes. Steep about 10 grams of jasmine tea per litre of cold water in the refrigerator for 4 to 8 hours, then strain. Cold brewing keeps the floral aroma and avoids bitterness, which makes it an excellent iced tea.

Why is some jasmine tea blue?

Jasmine tea is naturally yellow-green. Blue “jasmine” drinks contain butterfly pea flower, an herbal ingredient whose blue colour turns purple when lemon is added. The blue comes from the flower, not the jasmine.

Is jasmine tea green or black tea?

Most jasmine tea is green tea scented with fresh jasmine blossoms. Jasmine white tea and jasmine oolong also exist; jasmine black tea is rare. The tea keeps the scent of the flowers without, in the best grades, the flowers being left in.

How do jasmine, lotus, osmanthus and chamomile tea differ?

Jasmine, lotus and osmanthus teas are real tea scented with those flowers, so they contain caffeine. Chamomile is an herbal infusion of chamomile flowers alone and is caffeine-free. Jasmine rice is unrelated: it is a fragrant rice named for its aroma and whiteness.

Why is jasmine tea so popular?

Jasmine tea pairs a fresh green tea with an intense, sweet floral aroma that most people like on first taste. Fujian, and Fuzhou in particular, has made it for centuries, and it remains China’s best-known scented tea at home and abroad.

Can jasmine tea go bad?

Dry jasmine tea does not spoil if kept dry, but its floral scent fades, usually within one to two years. Store it airtight, away from light, heat and other smells, which the leaf absorbs easily. Discard tea that smells musty or shows mould.

Can jasmine tea be re-steeped?

Yes. Good whole-leaf jasmine tea and jasmine pearls usually give two or three good infusions; lengthen each steep a little. The jasmine aroma is strongest in the first cup and fades faster than the tea itself.
