Insight

¿Cómo sabe el té oolong?

Oolong spans a wider flavour range than any single label suggests. Lightly oxidised, green oolongs can be floral, creamy and fresh; more oxidised or roasted styles can show ripe fruit, honey, toasted grain, cocoa or mineral depth. Across 2 broad directions — floral and roasted — leaf cultivar, oxidation, roasting and brewing shape the final aroma and mouthfeel.

Oolong is unusually versatile in food because the category offers at least 2 clear aromatic tools. Floral oolong can infuse cream, custard, fruit or syrup; roasted oolong can season mushrooms, rice, chocolate or braising liquid. Use a strained infusion for clean texture, or finely ground food-grade leaf where visible specks and stronger tannin are intentional.

How do you brew oolong tea, and how many times can it be steeped?

Oolong can be brewed Western style — about 3 grams of leaf per 250 ml of water at 90 to 100 °C for 3 to 5 minutes — or gongfu style, with 5 to 7 grams in a small 100 to 150 ml pot and short infusions of 20 to 60 seconds. Good oolong gives five or more infusions, and many drinkers think the second and third are the best.

Tightly rolled oolongs such as Tie Guan Yin and Bai Ya Qi Lan need near-boiling water to open; a quick rinse first wakes the leaf. Roasted Wuyi rock oolongs such as Da Hong Pao also take boiling water but turn bitter if left too long, so keep infusions short. Bitterness almost always means too much leaf, too long a steep or water too hot for a light, green-style oolong.

Milk oolong is brewed like any rolled oolong: about 90 °C and short infusions bring out its creamy aroma. Drink oolong plain; it is rarely served with sugar in China, although roasted oolong makes good milk tea.

06

What are green oolong, dark oolong and blue tea?

Oolong spans a wide range: “green” oolongs are lightly oxidised and lightly roasted, floral and fresh, while “dark” or “black” oolongs are more oxidised or heavily roasted, with toasty, mineral notes. In Chinese, oolong belongs to the qingcha category, often translated as “blue-green tea”, which is why oolong is sometimes called blue tea.

Other drinks called blue tea, such as butterfly pea flower, are caffeine-free herbal infusions, not oolong. Osmanthus oolong is oolong scented or blended with osmanthus flowers for an apricot-like aroma. Lotus-leaf oolong blends are oolong mixed with dried lotus leaf, an herbal ingredient that is not tea.

Research on oolong and weight, blood sugar or skin is limited and mixed; there is no evidence of benefits specific to men or women. The practical cautions are the usual ones for tea: caffeine sensitivity, and reduced iron absorption if drunk with meals.

Preguntas frecuentes

No necesariamente.

Does oolong tea have caffeine, and can you drink it at night?

Yes. Oolong contains caffeine in the same broad range as green and black tea, and “theine” is simply another name for caffeine. Whether oolong keeps you awake depends on your sensitivity and the strength of the cup; many people find it calming yet alert, but caffeine-sensitive drinkers should stop a few hours before bed.

How much oolong tea can you drink a day?

For healthy adults, a few cups a day is typical; the limit that matters is total caffeine, and the FDA cites 400 mg a day from all sources as not generally associated with dangerous effects. Pregnancy, some medications and caffeine sensitivity call for a lower limit agreed with a clinician.

Why does milk oolong smell like milk?

Genuine milk oolong is made from the Taiwanese Jin Xuan cultivar, whose leaves develop a naturally creamy, buttery aroma during processing; it contains no milk. Some cheaper “milk oolong” is flavoured with added aroma instead, which should be declared on the label.

Can oolong tea be drunk with milk?

Yes. Roasted oolong makes a rich, nutty milk tea and is common in milk-tea shops. Lighter floral oolongs are usually better plain, because milk hides their aroma.

Can oolong tea be cold brewed?

Yes. Steep about 10 grams of oolong per litre of cold water in the refrigerator for 8 to 12 hours, then strain. Rolled floral oolongs such as Tie Guan Yin cold-brew especially well, giving a sweet, low-bitterness iced tea.

What is black oolong tea, and what is OTPP?

Black oolong is a heavily oxidised or roasted oolong. In Japan the name is also used for a bottled drink rich in OTPP, “oolong tea polymerised polyphenols” — compounds formed during oolong processing. That drink carries a Japanese government-approved health label for its stated dose; the approval covers that product, not oolong tea in general.

What is in oolong tea?

Brewed oolong contains caffeine, the amino acid L-theanine, catechins, and polyphenols formed during partial oxidation, including polymerised compounds typical of oolong. Unsweetened, it is almost calorie-free.
