Le thé noir est-il bon pour la santé cardiaque ?

Certaines études rapportent de petits changements dans les marqueurs de risque cardiovasculaire, mais l'image globale est mitigée. Une revue systématique des essais à court terme de thé 14 impliquant des adultes 798 n'a révélé aucune réduction significative de la pression artérielle ou des lipides sur 4 à 24 semaines. Comment infuser, servir et conserver le thé noir ?

Pour un thé au lait ou aux épices, testez les feuilles avec la recette finale : un arôme d'origine délicat peut disparaître, tandis qu'un assemblage vif reste perceptible.

Pour un thé glacé, filtrez complètement et refroidissez vite selon une méthode sûre pour les aliments. How do you brew black tea so it does not turn bitter?

Brew black tea with water just off the boil, about 2 to 3 grams of leaf per 250 ml cup, for 3 to 5 minutes, then take the leaves out. Bitterness and a drying, astringent finish come from over-extraction — too much leaf, too long in the water, or leaves left sitting in the pot.

Whole-leaf grades such as Fujian congou tolerate the longer end of that range; broken and CTC grades release colour and strength quickly and turn harsh sooner, so pull them nearer 3 minutes. A second, shorter infusion of good whole leaf is normal. Soft water gives a brighter cup; very hard water dulls the aroma and can leave a film on the surface.

Boiling the leaves themselves, as in Indian masala chai or some Middle Eastern and North African preparations, is a deliberate style: it extracts more tannin and colour so the tea still tastes of tea under milk, sugar and spice. For a plain cup, boiling makes black tea astringent — steep it instead. Drinking it is simple: plain, with milk, with lemon or sweetened; there is no single correct way.

When is the best time to drink black tea, and how much is too much?

Black tea can be drunk every day and at most times of day by healthy adults; the practical limit is caffeine. An 8-ounce cup of black tea typically contains 30 to 50 mg of caffeine, and the FDA cites 400 mg a day as an amount not generally associated with dangerous effects for healthy adults.

Morning and early afternoon suit most people, because caffeine can keep sensitive drinkers awake for several hours. If black tea in the evening disturbs your sleep, move the last cup earlier or switch to a caffeine-free infusion; tolerance varies widely from person to person. Pregnancy, heart conditions, some medications and caffeine sensitivity are reasons to agree a lower limit with a clinician.

Black tea feels both alert and calm to many drinkers because it combines caffeine with the amino acid L-theanine. Some people find strong tea on an empty stomach causes nausea or discomfort; taking it with or after food usually avoids that. Tea polyphenols reduce the absorption of iron from plant foods, so people who need to watch iron intake are commonly advised to drink tea between meals rather than with them.

How do you make iced black tea and sweet tea?

Brew black tea at double strength, then pour it over ice so the melting ice brings it back to normal strength; or cold-brew it by steeping about 10 grams of leaf per litre of cold water in the refrigerator for 8 to 12 hours. Cold brewing gives a smoother, less astringent iced tea.

For iced and sweet tea, choose a black tea with body and briskness: a delicate tea tastes thin once chilled and diluted. Sweeten while the tea is hot, because sugar dissolves poorly in cold liquid, or keep a simple syrup of equal parts sugar and water for cold tea. Black tea is the usual base for American sweet tea and most bottled iced tea.

Iced tea sometimes turns cloudy as it cools; this “tea cream” is harmless and comes from tea compounds binding together at low temperature. Cooling quickly, brewing a little weaker or cold-brewing reduces it.

Which black tea is best for milk tea, bubble tea and chai?

Milk tea, bubble tea and chai all need a strong, full-bodied black tea whose flavour survives milk, sugar and spice. Malty, brisk teas and broken or CTC grades do this best; a delicate, floral black tea disappears under milk.

For milk tea, brew stronger than for a plain cup — more leaf rather than a much longer steep, which adds bitterness rather than depth. Bubble tea shops typically brew a concentrated black-tea base and then add milk, sweetener and tapioca pearls. Masala chai simmers black tea with milk and spices such as cardamom, ginger, cinnamon and cloves; the tea must be robust enough to hold its own, which is why Assam-style CTC tea is the traditional choice.

Adding milk changes the taste and colour but there is no good evidence that it “cancels” the tea; for health, the amount of added sugar usually matters more.

Is black tea good or bad for you?

For most healthy adults, black tea is a reasonable everyday drink, but it is not a treatment. Research into tea and heart health, cognition and inflammation is mixed or preliminary, and the realistic downsides are caffeine sensitivity, reduced iron absorption with meals and tooth staining.

Black tea contains caffeine, L-theanine and polyphenols such as theaflavins and thearubigins. Short-term trials have not shown reliable reductions in blood pressure or cholesterol, and reviews of tea and cognition find at most modest effects that appear linked to caffeine and L-theanine together. Claims that black tea cures or prevents disease are not supported.

Black tea does not dehydrate you at normal intakes. In a randomised controlled trial, men drinking four or six cups of black tea a day stayed as well hydrated as when they drank the same amount of water. Caffeine has a mild diuretic effect only at higher doses.

How do Assam, Ceylon, Earl Grey and English Breakfast differ from Chinese black tea?

Assam, Ceylon, Nilgiri and Dimbula are black teas named for where they grow in India and Sri Lanka; Earl Grey and English Breakfast are blends, not origins. Chinese black teas from Fujian, such as Lapsang Souchong, Jin Jun Mei and Tanyang Gongfu, are made mostly as whole-leaf orthodox tea with a softer, rounder cup.

Assam, from north-east India, is malty and strong and is widely made by CTC (crush, tear, curl) for tea bags and milk tea. Ceylon is black tea from Sri Lanka; Dimbula is one of its high-grown districts, known for a bright, brisk cup. Nilgiri, from the hills of southern India, is fragrant and brisk and stays clear when iced.

Earl Grey is black tea flavoured with oil of bergamot, a citrus fruit. English Breakfast is a blend of strong black teas, often Assam, Ceylon and African teas, built to take milk. Most iced tea and most everyday tea drunk in Britain is black tea. The strongest-tasting black teas are the brisk, broken or CTC grades; the most aromatic tend to be whole-leaf teas such as Jin Jun Mei or Darjeeling.

Does black tea go bad, and how should it be stored?

Dry black tea does not spoil in the way fresh food does if it is kept dry, but it slowly loses aroma and briskness; most black tea tastes best within about two years. Tea that smells musty, mouldy or fishy, or shows any mould, should be thrown away.

Store black tea in an airtight, opaque container away from heat, light, moisture and strong smells, because the leaf absorbs odours easily. A cool cupboard is better than the refrigerator, where condensation and food smells are a risk. Black tea keeps its character longer than green or lightly oxidised tea, and a best-before date on the pack is a quality date, not a safety cut-off. Brewed tea is different: drink it the same day, or keep iced tea refrigerated and use it within a day or two.
